This breakfast treat is too good to be true. As a lifelong ice cream obsessed lady, I am glad to be able to create a healthy vegan one that I can enjoy for breakfast on it’s own, or i can get creative with it and use it to top waffles and other dishes. I’m a huge fan of this because I don’t have to blend the ingredients and then wait for it to freeze-I can enjoy it right away, which is perfect for an impulsive person like me!
I will definitely be experimenting to make several varieties of this ice cream, but here is the standard one I have been enjoying.
- 3/4 cup Chocolate Cashew Milk
- 4 Large Ice Cubes
- 1 Large Frozen Banana
- 1 Tbsp PB
- 1 Tbsp Chia Seeds
- 1 Tbsp Ground Flax Seeds
- 1/2 Scoop Protein Powder (Optional)
Blend together all ingredients in high-powered blender that is capable of crushing ice cubes. You may hear some weird noises when blending. If so, add more liquid. The end result should be thick and smooth (and delicious!).
