Sista Night-Vegan Tex Mex Bowls and Pumpkin Masks

It hasn’t rained in New England since about August, so now we are being punished with an entire week of rain! Susan and I tried to get in one last walk (we were also in a Fitbit Challenge) before the deluge, but we were not successful! We were about a mile from home when it started, but it was kind of oddly enjoyable walking through the rain.

For dinner, we made a “Chipotle” inspired meal, and both assembled our own Tex Mex Bowls, using quinoa as the base.

For Bowl Options, I used:

All the fixins’!
  • Quinoa
  • Lettuce
  • Corn
  • Black Beans
  • Pico de Gallo
  • Broccoli
  • Guacamole
  • Onion

They were all on individual plates for us to assemble as we desired. We even made some lunches for tomorrow, because we had a lot of extra food!

Next, it was time to make some PUMPKIN FACE MASKS!

I whisked together 1/4 cup pumpkin, 1 egg, and 2 tsps of honey

This was enough for two face masks. We let it sit on our faces for 20 minutes before rinsing off. This mask is supposed to be good for dry skin, to moisturize it with the honey, and to eliminate acne. It felt kind of drippy on for a while, but after a few minutes I could feel it tightening. I feel as though if it’s tightening then it’s working.

Pumpkin is supposed to be beneficial to the skin because it contains fruit enzymes and Alpha Hydroxy Acids. These increase cell turnover, and help to brighten and smooth the skin. Pumpkin also contains Vitamins A and C to boost collagen production to prevent the signs of aging! (Source) Sounds like a winner to me!

We then had some tea and Flourless Pumpkin Chocolate Chips Bars with Peanut Butter instead of Almond Butter. They went well with tea!

For television we watched:

The Muppets-Absolutely hysterical. I laughed out loud so many times. Miss Piggy dating Josh Groban? It’s great and will definitely watch again next week. It’s like watching The Office, but with your beloved Muppet friends.

Grandfathered-I only watched this because of my extreme obsession with John Stamos, and luckily, it was actually funny and he looked amazing. My only issue is that I found myself being insanely jealous of his “true love” on the show that he is bound to start dating again. SIGH.

Scream Queens-Once again, I fell asleep and didn’t finish it, but I swear I do like it. The show has an odd sense of humor, but it’s very enjoyable, and I will finish it later! Promise!

We finished up the night with a bottle of Lemon Ginger kombucha in some fun Halloween cups. Cheers!!
