This lunch salad does require (some) prep time, but I swear it is minimal, and it will last for days!
You only need two ingredients, that I happened to pick up on my Target run last week.
To assemble this little concoction, you must first line a baking sheet with 1 tbsp of olive oil. Place sweet potatoes on pan and stir around so they are coated with oil. Then roast the archer farms sweet potatoes in a 425 degree oven for 25 minutes, turning every 7 minutes or so.
In the meantime, heat the southwestern inspired corn and black bean salsa according to directions on package. Let items cool for a few minutes, and then mix together in a bowl. Season with salt and pepper. Add a few shakes of cayenne pepper if you want an added kick!
I will be topping this with guacamole and eating it cold today for my lunch!
