I love not having to think about breakfast in the morning! I try my best to meal plan so I am always prepared, but I love having something convenient and healthy to grab.
Overnight oats definitely fit the bill. You just have to mix together a few ingredients the night before and you’re ready to go in the morning. I’ve tried a lot of flavors over the years, but my absolute favorite flavor combination is chocolate peanut butter overnight oats. I was more than excited to wake up at 5:30 this morning just to dig in. This breakfast seriously tastes like dessert!
Here is my recipe: (Adapted from this recipe)
Ingredients:
- 1/2 cup oats
- 1 tsp chia seeds
- 1/2 cup chocolate cashew milk (unsweetened)
- 1 tsp maple syrup
- 1 tbsp PB
- 1 tbsp chocolate chips
- 1 tbsp cacao nibs (optional, but a healthy addition)
Directions:
- Mix together the oats, chia seeds, cashew milk, maple syrup and PB in a bowl and add to a small mason jar.
- Refrigerate overnight
- In the morning, add in chocolate chips and cacao nibs. Enjoy!
YES, I love the convenience of overnight oats, I have them work nearly every morning! And this is a great combination, I love trying new versions.
